Shout-out to the co-workers who feed other co-workers! There is a special place in Heaven for those that spend time making food and than surprising everyone with it. Today, I was treated to an incredibly scrumptious ceviche with all the fixing and snagged the recipe to share with you all!

My co-worker Emily had to contact an old co-worker of hers to make sure she got all the ingredients right and now we ALL are reaping the benefits!

Ingredients and Instructions for Ceviche

  • Cooked frozen shrimp - thaw and soak in lime and lemon juice
  • Lime and Lemon Juice plus slices of lemons for toppings
  • Chop the following as small as possible; almost one whole cucumber, 2 large tomatoes, 2 stalks of celery, 1/2 of a red onion, 1 or 2 shredded carrots, 1 or more seeded jalapeño depending on how spicy you like it.
  • Add ingredients to a bowl with salt and pepper and one small container of clamato
  • Your toppings; Avocados, Cilantro, Salt, Pepper, Tapatio (secret topping is KETCHUP!) use crispy tostadas to scoop it up with. I broke mine into pieces but you could totally pile your tostada full and make a big mess. Well worth it.

This dish is so fresh and satisfying. You'll want to let it sit in the fridge overnight so all the delicious flavors can blend together and be prepared to make a bunch because it will disappear fast!

It was so cool to see Emily role out her cooler with all the toppings and a giant bowl of ceviche and tell everyone to have at it!

The weighted rank pulls the beer toward the list's average based on the number of ratings it has and aims to allow lesser-known beers to increase in rank. Only beers with at least 10 rankings to be considered; we took it a step further to only include beers with at least 100 user rankings in our gallery.
