Ahh, it's time for me to head back into the kitchen and cook something good. I'm in the mood for something tasty but don't really know what to make.

I looked in the pantry and saw all kinds of essentials, rice, an assortment of pasta, canned tomatoes (did I really need to buy 4 cans of Rotel?), and there's some buttermilk pancake mix.

Wait, what's this bag? I opened it up and the fresh smell of uncooked quinoa wafts underneath my nose.

This bag of quinoa has been sitting here for several weeks. I had signed up for an online cooking class (no, it wasn't the "Healthy Eats" one from local chef, Elaina Moon). No, wait, it wasn't a cooking class, it was for a recipe I saw on a YouTube video. It was Mexican Quinoa Casserole. I was in a food prep stage apparently. I cooked the meal but neither I nor my 9-year-old daughter, Willow, particularly liked the dish.

There's something about quinoa that I can't stand. I think it sparked up from a lot of my friends bringing pasta salads to get-to-gethers and just when I had picked up the colander spoon to scoop up a serving of pasta salad I noticed there was quinoa in it. They never told me it was pasta and quinoa salad, they said it was PASTA salad!

It seems that Washington state on the whole has become obsessed with quinoa during these coronavirus times, which is why Lifehacker.com says we are the state looking for the most quinoa cooking tips.

I put the bag of quinoa back in the pantry. I'm going to order a pizza instead.
